Fully ripe cherries were pulped using a Penagos Eco-pulper.
The beans were then fermented and soaked in water for 12 hours before being removed to drying
tables.
The Penagos Eco-Pulper revolutionised wet coffee processing by dramatically reducing water consumption through a mechanical depulping and demucilaging system.
While traditional processing can require several litres of water per kilogram of coffee cherry, the Eco-Pulper uses just 0.2 litres per kilogram, significantly lowering its environmental impact while delivering greater consistency and precision in specialty coffee processing.

Sookoo Coffee is a specialty coffee producer and exporter based in the Guji highlands of southern Ethiopia.
Founded by Ture Waji, the company works closely with hundreds of smallholder farmers, combining meticulous processing, careful cherry selection and full traceability to showcase the distinctive character of Guji coffees.
