El Café
Natural Process
Ripe cherries are carefully hand-selected to remove underripe and defective fruit. They are then laid whole on raised African drying beds in thin layers of approximately 4 cm.
During drying, the cherries are turned several times a day to ensure even drying and prevent unwanted fermentation. The process takes around 15–28 days, depending on weather conditions.
Once the desired moisture level is reached, the coffee is rested, hulled, and carefully sorted before export.
