The Project
Granja Paraiso 92 is a family farm producing different varietals using highly innovative cultivation systems. It also has its own microbiology laboratory, quality laboratory and processing plant. All this allows these coffees to have distinct, unique and standardized profiles and notes.
Chemical engineer transformed into world-class coffee grower, Wilton Benitez is known for his evasive and acclaimed thermo shock processing techniques. He has a lifetime of experience in the production and processing of exotic coffee, with several awards for the quality of its coffees.
Wilton is able to produce a different and replicable array of coffees with the help of a very innovative drying system also developed by himself which don’t use any fossil fuels and only need moderate electric energy for their operation avoiding greenhouse gas emissions, and that at the same time allows the creation of drying curves.
The Coffee
Orange Bourbon is a natural mutation of the Red Bourbon coffee tree. The name comes from the fact that its fruit turns into an orange color with some brown spots when fully ripe.
Orange Bourbon is be a very high quality coffee, with cup attributes that tend to be more citric and fruity. There is evidence that the lower the yield, the higher the quality, as the plant can use its energy more efficiently.
Because of its cultivation may require more attention and care than other varieties, it is not a very common variety to find. Additionally, being so rare, pickers are not used to it, making it a very difficult variety to pick and process.
