The Project
The Region of Sozoranga, located in the Southern province of Loja, is an old Spanish settlement dating back to early colonial times. The Spanish settled here because of its warm and fertile lands. Since then, this area has been important for its agricultural production, being at one point a crucial spot for feeding the liberation army in their battle for independence of Loja.
Coming forward in time, Sozoranga, like most of the Loja province, has been a stable coffee producing region for most of the 20th century.
Chorora is owned by Olinka and Yambamine by Diana, this farms are located next to each other on a steep hillside. They are also pioneers in experimenting with different processes and are always developing new methods and techniques.

The Coffee
Typica mejorado is a hybrid between an Ethiopian Landrace and Red Bourbon. It actually doesn’t come from the Typica variety.

After hand-picking the cherries they went through an extended carbonic maceration for 7 days. Then, the cherries were pulped and washed. The extended fermentation leaves the parchment with a red colour, hence the name Red washed.

A slow drying process takes place after washing, where the coffee is constantly turned for an even dry and monitored so the moisture reaches the desired level.

Lastly, it is left inside GrainPro bags in a temperature and moisture controlled room for stabilisation during 6 to 8 weeks until the moisture content is stable.
