This Yellow Caturra lot was carefully hand picked at peak ripeness and processed using a traditional washed method.
After harvest, the cherries were depulped and fermented for more than 48 hours, allowing the mucilage to break down naturally and enhancing clarity in the cup.
The coffee was then thoroughly washed with clean water and dried under the sun for 7–15 days until reaching optimal moisture content.
El Proyecto
Nestled in the mountains of northern Peru, Cajamarca region offers ideal conditions for specialty coffee production, with fertile soils, high elevations, and abundant water flowing from the cloud forests of Cutervo. This unique landscape, shaped by the Andes and protected by the Cutervo National Park, supports both local communities and exceptional coffee quality.
El Zorro Project originates in the district of Callayuc, an emerging coffee growing area where smallholder farmers cultivate coffee amid rich biodiversity and breathtaking natural surroundings.
The project takes its name from a well known community member affectionately nicknamed “El Zorro” (“The Fox”), whose story helped build trust and strengthen relationships between local producers and the Cultivar team.
Today, El Zorro represents the dedication of farming families committed to quality and showcases the remarkable potential of one of Peru’s most exciting coffee producing regions.
